Chugging along the West Highland Line, you’ll be on one of the UK's most scenic train journeys. Sustainable travel tip: Road-tripping around Scotland’s vast wilderness is tempting, but consider a railway holiday instead. Top of the list should be Tom Kitchin’s Michelin-starred Leith restaurant, The Kitchin, celebrating Scottish produce, followed by his elevated pub grub at Stockbridge’s The Scran and Scallie. Edinburgh in December is, of course, raucously festive, and winter’s a great time to appreciate the hearty fare of the city's best restaurants. Nothing is cosier than a few wee drams by a roaring fire after a busy day out in the elements – be that fat-biking East Lothian beaches, or tracking red deer across the Cairngorms’ snow-dusted slopes.
